It could be your water. Try a higher temperature, lighter roasts aren't as willing to let coffee extract at lower temps. How acidic are we talking? Does it taste like lemon floor cleaner?

Yeah, 36g of coffee is way too much for a no.2 V60. I'm only starting my draw down now, and it's 4:30 in. Gonna stick to 18g batches from now on.
