I used day old rice, but it doesn't matter if your stove is hot enough (like Chinese restaurant jet engine stove). What you need it proper heat control. Add a decent amount of oil and don't add too much rice. There is a reason chink wok dishes are usually for one person at a time. I didn't use a wok for this though, used my cast iron but it worked fine. For your specific problem it seems like you didn't heat your oil high enough and you need to use a spatula to stir constantly.

Made this a while back. Some Chinese sausage with a soy sauce,fish sauce, sesame oil and shaoxing wine sauce combo does it for me.
