Just let the staff do the work.

1) Walk in and approach hostess.
>How many?
Say there are two people in your party. She will tell you how long the wait is and call you when she's ready to bring you to a table.

2) Sit and order.
>Hi, I'm Sarah. I'll be taking care of you today. Is this your first time dining with us?
Only say yes if you want her to run through the menu with you.
>What can I get you all started with? We have Coke/Pepsi products and [assorted alcoholic beverages].
Don't bother with the menu, just ask if they have whatever you want to drink because they probably do. If not, she's heard someone ask for it before and will offer several close alternatives. Pick from these and read through the menu while she gets your drinks.
>Did we want to start on any appetizers or were we ready to order?
*Protip: notice the Option Close here - she wants you to hurry up because serving faster = more frequent tips since she'll clear more tables by the end of the night. But if you at least order an appetizer, she'll be happy because that should increase her tip. She doesn't want you to sit around if you're not going to order food. If you expect to be there a while, just order an appetizer or drinks so the service doesn't go to shit. If you only need another minute or two to look over the menu, it's ok to ask for more time, but I'd say it's impolite to do this more than twice without ordering something.
As far as ordering an entree, feel free to customize it however you want and swap sides. She'll let you know if there are any additional charges for add-ons and substitutions.
>Everything looking good? Can I get you anything else?
She'll ask you this either while serving your entree or a couple minutes after you've started eating. This is usually where you'd ask for additional condiments or a refill. I only ask her to send a dish back if it's not what I ordered, the cook temp is way off, or if it's outright disgusting to the point I can't eat it.
