I don't understand. I feed my starter a day before I bake and I rise for 18-24 hours. Crumb is pretty dense too... Its all wrong. In other words it does not look like the pic.

Where my baker bros at?

Heya /ck/, I'm 18, living with my parents and my mother is going through an emotional crisis. She can't make her sourdough bread sour. She's been attempting to make it for three months now and can't get it. Any ideas I can pass onto her? I'll try to supply information best I can

I have a technical question regarding sourdough.
How does the environment play in when preparing a sourdough starter?
Would the flora of the culture differ a whole lot depending on where you mix it, say, a "sterile" lab environment vs the a cottage out in the woods?
What my question pretty much boils down to is: does the yeast/bacterial flora come from the surrounding air while preparing it, or is it already in the flour or whatnot?

Oh wow, 300 years, that's crazy. Shame it died.

But getting a starter over the internet wouldn't be possible for me cause I can't find it where I live. In fact, I can't even find sourdough bread here, therefore I have never tasted it. I'm making a starter of my own to see what's all about those sexy loaves, i mean, look at this gorgeous pic.
