this is done by removing the pig bones and rolling it up like a big sausage. on the inside there is garlic, rosemary and wild fennel, gets slowly roasted for many hours and sliced up to make porchetta sandwich
the extra crispy skin is fabolous

we do the pig like this in italy: mostly salt, pepper, rosemary, garlic, finocchietto selvatico (dont know name) and some put the boiled liver of the pig in the middle
