you got pretty good advise so far. only thing i would add is that you're either getting better or worse. if you aren't learning anything new and improving at the kitchen you're at -- broaden your definition of learning too, even just being consistent can be a from of learning -- then get the fuck out. that being said, i don't think anyone needs to go to culinary school for this industry unless you're interested in doing that molecular gastronomy stuff -- which most fine dining isn't really doing anyway.
t. worked in a couple fine dining restaurants with those crazy tasting menus you've described. i learned a shit ton but at the end of the day realized tweezer food wasn't for me
