They do, but not in the same sense as an American version of a pizza. It's used more sparingly like a margherita as opposed to cheese covering every square inch of the pizza like we do here. If you use/ have used fresh mozz like you would the dehydrated stuff, it will add a lot of water to the pizza, which fucks with cooking time/ crust.
