but i don't really follow recipes
I just look at a few to get some ideas for techniques and flavor combos and then wing it

you can't really even follow cooking times or measurements anyway, ingredients will always be different, and many recipes are pretty arbitrary to begin with and you should always cook with what you have already in your fridge and what is freshest/cheapest.
