It's different and it's "quirky" and it's foreign. It's easily recognizable, it's something you don't have, and they can post it on Instagram.
People in big cities don't buy $15 egg salad sandwiches, they pay $15 to show other people "I'm eating something new and trendy that you don't have, look at how successful I am." They most likely don't even eat it because egg salad is terrible for you, and bread has all those icky carbs.
