You can't go wrong with a nice stew.
It can be varied endlessly around your preferences or around what happens to be on sale or in season.
Brown some meat and onions in a pot, add in whatever vegetables you want, add some liquid (depending on budget you can use water, beer, wine, broth, or stock), spices and herbs obviously, simmer for a couple hours.
Eat as-is or with rice or some nice bread. You can very easily and cheaply bake the bread yourself as well.

For learning and improving in the kitchen I usually suggest the humble French onion soup. It's cheap and delicious and it's a great opportunity for you to learn some knife skills.
Look up how to french slice an onion on Youtube. In fact, look up a lot of really basic shit on Youtube. People tend to assume they know how to chop an onion or peel a potato or whatever and then they do it the wrong way their whole life because they never bothered to check.

Something like pic related is very easy to make as well. Just root veggies and a chicken, or parts of a chicken, in the oven.
