Mirepoix is really just vegetables not specifically carrots, onuons, and celery that's just the French style of stock making everyone learns. The creole and Hatians omit the carrots and use green peppers it's the same thing and serves the same purpose as mirepoix for gumbo they do differentiate by calling it trinity sometimes though. As for OP's question it doesn't matter what the veggies so he can leave the celery out if he wants it will still come out fine but firmness also doesn't matter for jack shit in using mirepoix so he might as well toss it in since it's going to add flavor and be strained out anyway no matter how flaccid it is and he can get some use out of it since he is just going to toss it anyway
