I started two months ago by put some hering, salt and water inside a 5 gallon mineral water plastic bottle, covered with some cardboard and left it to rot in the attic. The recipe I followed told me to wait two months, so today I opened and seems that little happened in these months. Doing more research I discovered that a) I should wait a minimum of 6 months and b) must let the whole thing open in the sun for 24h before sealing the bottle to kickstart the fermentation process. Also the odor was ok but I noticed a strong smell of plastic coming from the bottle. Should I change to a tin container? Also is the 24h thing really necessary to start the fermentation?

i can't even fathom in my mind that canned fish is a real thing that people eat in this century, it seems like an anachronism, something you do to larp like it's 1940, even when they're properly packaged and not rancid, they still look 100% identical to rancid fish pickles in lye, just utterly inedible protein gruel
