Volumetric is for quick reference, by weight is for precise... its not a hard concept.

If you know roughly how much salt you usually put in a soup you always make, you just whip out the teaspoon and quickly add it in by eye, I could use my fingers, but the teaspoon is a little more accurate. The same with let's say making pizza dough, I know roughly how much flour I need, I'm not going to get my scale out, and weigh everything exact, I know how much in cups and measuring spoons i need to make my pizza dough.
