Sfoglio delle Madonie, a cake typical of sicilian mountains.
The dough is similar to a somewhat soft shortcrust pastry.
The filling, however, is special. It's prime ingredient is extremely fresh Tuma cheese, which is the first, barely salted form that will lead to pecorino cheese, reduced to a pulp with sugar, eggwhites (leftover from the dough), and generously flavoured with cinnamon and high quality chocolate.

A similar concept, but something that you can actually try/make, is Pastiera from Naples.
It calls for a weird ingredient, "orange flower water". It's not a meme, the flavour form this essence is incredible.

On a more modern take, I love setteveli, a complex cake composed of seven different layers of chocolate. It's hard to balance properly, but when it's properly made it's top notch modern cuisine.
