im not sure if you took the skin on but i usually do and it just melts away.

mashed potatoes

boil a shitload (1kg dont need to peel) till you can stick fork in easily
drain
mash
salt pepper
add frozen vege mix (boiled)

if you want it to keep longer leave out butter and milk
also drop some peeled garlic in at the start. itl soften and mash easy and tastes good

keeps in the fridge for a week or so.
get some cheap sausages and you got a hearty cheap as fuck meal.
