For traditional Borsch you make a beet sour culture from scratch, it takes 3 days to ferment and get sour. You can buy the stuff premade in a bottle too if you have a polish grocery by you.
Nowadays it's just fresh beets boiled with potatoes and maybe carrot and cabbage in chicken stock, and made sour with vinegar. The beet sour tastes much better but isn't necessary. Meat is optional but really good in it, typically some sort of sausage or beef.
