About to have a good sized harvest of these bastards, any flavors that are good with them for making a sauce? With habaneros, aside from straight habanero sauce with vinegar I like making a tropical mango, pineapple, habanero sauce. Not sure what to do with the reapers aside from just making hot as fuck sauce.

Should heat be considered the sixth taste? We have sour, salty, sweet, bitter, and umami. But what about the cooling of mint, the burning of chili's, or the piquantness of peppercorns? It's not exactly flavor, so shouldn't it be classed with the other tastes?
