Gordon Hacksey makes these "Chinese-style tortellini" to try and impress a head chef at a London dim sum restaurant but it's like something a first-month culinary student would pull together It makes me genuinely mad that a "professional" would make something so retarded and convince himself it's good
>Mashes together duck, scallop and shrimp as the protein
>Waste of duck by not letting it stand on its own
>Waste of scallops by pairing them with a strong flavor like duck
>Doesn't understand why pork/shrimp would be better than duck/shrimp because pork brings fat but no gameiness (feels like he just really wanted to make something "fancy" by using duck)
>vegetables for "texture" - it's a dumpling, the texture is supposed to be soft and tender all throughout like every dumpling made by every culture
This will mostly be a Gordon Ramsey hate thread I guess but feel free to post other examples of "professional chefs" making hack dishes
