The key is a good seasoning and making Bouletten instead. My recipe:
500 g half pork half beef mince
3 slices of sandwich bread thrown in a blender
1 large egg
1 finely diced medium or large onion
14 g salt
2 g black pepper
1 g white pepper
1 g mace
1 g ginger
0.5 g cardamom
0.5 g allspice
0.3 g coriander
2 g paprika
A handfull chopped parsley
Maybe also a garlic clove

Just knead everything together until it binds well, turn it into 100 g balls and fry them in clarified butter or oil.
