Maybe..
I have a lot of experience in both breadmaking and brewing, so I don't agree that different strains of yeast don't have different flavor profiles.
I've never used Red Star or Fleischmanns for anything but bread,(shout out to Insta-Fas as well,) but you might not be wrong.
I still think using either a ginger bug or even just carbonated water added to syrup is better for me.
I can taste the difference.
I do like fermented foods, and think they are imperative to maintaining a healthy gut biome.
