Ramen shop using a ticket machine and all bar seating.

get your tickets. sit a your stool. press the call button. wait staff gets your tickets. a few minutes later you get your ramen, rice, gyoza, drink, etc.

If you want more you can order it by using provided pen to circle items on chop stick wrapper menu. press call button and have money ready. wait staff comes gets wrapper and money. comes back to deliver food/drink items and change.

each stool would have sort of private booth. divider walls between customers. a curtain in front of you. Just a narrow open walk path behind you. just two rows of seating in a narrow single room. in between the rows is the work area for the wait staff. Which you can't see into expect when the move your curtain to get and deliver your stuff. One end is the entrance and ticket machines. Other end is a kitchen that is open to the center area between rows of seating. you can't see into the kitchen either.

paper napkin dispensers on the wall behind you. placed in between stools so you can reach one from either side. each mini booth will have a pull tap to dispense cold drinking water. there will also be a stack of clean drinking glasses up and out of the way for you to use. each mini booth will also have a small container of bamboo chop sticks in paper wrappers. the chop stick bin will also have an ink pen in it. So you can use it to circle items to order on the paper wrapper to the chop sticks. little electronic call button in the mini booth also. If you don't press the button then no one will come by to wait on you.

there will be a small initial paper order form. you will circle how hot you want it. how fatty the broth is. how you want the noodles cooked. how much green onion.

for those that know their ramen. yes I'm talking about opening an Ichiran Ramen.
