I got kind of antsy and tried my hand at this, but I didn't have time to get all the special stuff so it's just shallots and ginger and a little garlic, as per your method. The meat is pork cheeks and the spices are aleppo pepper, cumin, black pepper, cayenne, and fenugreek. I also used a little bit of white wine to deglaze the pork cheek fond before adding it to the shallots.

The shallots went from like the entire pan, to like an inch at the bottom of the pan, I feel like I should have used more. Also it took about an hour and a half to reach the deep brown, since I didn't do the baking soda.

It's not really proper but if it turns out tasty I might make the 2 hour round trip for all that crazy stuff this weekend. Still got a while to go for the meat to get tender.
