The real secret that I learned after many years of trying to make Chinese food at home, is that Chinese restaurants use special high heat burners, capable of reaching 600-700 degrees. All the stir fried or just fried dishes are being cooked in this heat, which gives the food a smokey flavor you can't duplicate at home. So basically, I can make really good Chinese food for it being homemade, but still can't match my favorite dishes from my favorite restaurants.

tl:dr the Chinese will always win in the end
