Again, I have an actual meat thermometer, that I use, I'm just not going to remove the one that's already there because why would I?

I take the bird out when it's done, not when the plastic thermometer says so.

What do you think is in that herb butter?

Fresh thyme, sage, and rosemary from my garden.

It's stuffed under the skin mostly, then a bit on top of the skin, which is then basted every half hour or so.
