If you're interesting in Sous Vide, I recommend this book: http://www.amazon.com/Modernist-Cuisine-Home-Nathan-Myhrvold/dp/0982761015 (or a PDF version of it). It's a very nice guide for sous vide cooking.

have any of you guys made french macarons before
i keep fucking up
i keep doing what the recipes ask for: aging the egg whites, adding cream of tar tar, letting the batter dry, folding the batter ~50 times or less until it looks like fucking "molten lava", etc
i keep getting different problems each time, no feet, cracks, sometimes the batter doesnt even dry
any advice

Fucking macarons.

I live in NYC. There's a fucking Macaron place every other block. In MANHATTAN. In Brooklyn they're probably every block.

I don't get the appeal.
