There's a reason for that. It's called New York City water. Your flyover state no one has ever heard of literally can't make NYC Pizza because you don't have NYC water. It's Science.
Did you know many pizza restaurants have resorted to importing water from NYC in an attempt recreating the world-renowned quality of NYC pizza? Yeah.

Sorry, but if you don't live in New York City, you literally can't make New York Pizza. Our municipal water system is scientifically proven to have unique properties that result in the best quality of dough. Any "New York style" pizzas you may have had outside of New York City were hopeless imitations of scientifically-proven greatness.
Never been to New York? You've never had a pizza. Oh yeah, and the same goes for bagels.
