Try a reverse sear next time. You will get much better heat coverage and not have those rings.

I just find it results in a much better cooked piece of meat where the inside is almost completely uniform, unlike what you get by just searing alone.

OP here. I actually put it in the oven first for 20 minutes @ 200 degrees. This was thr result.
