But for some reason that desire to learn new things and techniques does not include sous vide? Seems odd, especially when you don't need to spend a penny to try it out.

Everybody does. It's just that a lot of people are stupid and think they have to buy an overpriced meme appliance for the purpose.

I doubt it. But the only thing stopping them is ignorance, not the lack of a "water bath". Put a pot on the stove. Stick thermometer in it. Adjust range to keep the temp where you need it.
