They give a better grip on meat assuming you're working with large/heavy pieces, but they also fuck with your dexterity for small stuff.

As for the saw? Depends entirely on what kind of blade was on there. If it was a scalloped blade like pic related they would actually protect you. If it was a blade with teeth on it then you'd be fucked (and so would the blade).
