that chart is too conservative imo, even for gongfu brewing. Personally I do 20-30 seconds 1st steep unless its greens, because those get bitter really fast.

but to answer your question...gaiwans for personal use are really small. You have a lot more tea to water, and you sip out of smaller cups to appreciate the taste. Pic is about the size you'd use for personal consumption (100-150ml)
