When work allowed me to fuck about with the smokers I bought a cut of brisket from the butcher delivery.
I smoked it overnight at 90 then the smoker cooked it for 3 hours at 120

Actually made a little money on it since the head chef let me sell portions as a special.
I ate so much of it too, made burnt ends and some brisket subs
