I agree with this. I freeze leftover poultry carcasses to remake into stock. After the stock is done, it's barely more flavorful than water. I have to separate a small portion of it so that I may salt it and taste if it needs to be reduced more. It's too hard to tell if it's "right" before salt, and you don't want to salt the whole stock, hence the small portion to test.
