it's possible, but not ideal. you've got the right idea with the water and a big metal bowl over the cookie sheet. it'd be best to spritz the dough or bowl with water before putting the bowl on top of it, and make sure it seals down completely. then remove it halfway through the bake.

a baking stone with the ceramic insert will probably work, just double check the temp the ceramic can go to.

google "the float test," that'll help you know when it's ready to bake with. also, it should be doubling in size within a few hours after feedings. keep a dish towel over it if you're storing it on the counter, or cheesecloth and a rubberband.
