it depends!!

I find sardines are great with either really ripe or well-aged cheeses/other dairy products (Greek youghurt, goat-cheese/feta, sour cream, etc) in the context of assembling a dish. I'd be more inclined to use anchovies alongside milder cheeses, particularly if you're using a lot of it (like on a pizza!)

if dairy isn't a factor then I'd probably go with deenz, nine times out of ten, since its a much heartier protein
