That's the point of marinating, salting, or smoking meats before dehydrating them or even just dehydrating them. they are too dry to grow bacteria.

I'm gonna blow your mind. real dried meats and jerky is made from RAW meat and is ideally cold smoked and cold air dried.

Your modern dehydrator actually slow cooks it (sort of) during the drying out process.

cooking it before is something NO ONE does.
