beef braised with ale
2kg ox cheek
800g carrots
1kg white onions
tallow
herb bundle - thyme, rosemary, bay, chervil, parsley
beers - as many and much as possible

salt your meat a day or two before, then rinse and dry before searing at a moderate rate in the tallow in a large cast iron pot
when all is decidedly cast with good colour, add the carrots and a splash of lighter beer
cook these till happily sweet and roasty
drain, beer, onions in - these we want quite thoroughly coloured but not overstepping that heat beyond which all flavour is phenoly char (good sometimes, not here)
then you want to add a good glass of beer to the pan, and deglaze hard - scape up all the good shi and stop it burning
add the meat, carrots, herbs, and stock to just cover. and simmer in a wide pan for a while, till it is all threatening to go very dark and sticky, then rescue the bugger with something a little weightier (a wheat perhaps)
repeat this a few times, never drowning the cunt mind, and give him a few flavours to delect
a fair few hours (and beers) later, you'll have a very nice stew to be eaten with potatoes, maybe fondants...
