After much experimentation I have concluded that this is the best order to make fried rice in:

1. Fully cook the egg first
2. Add frozen vegetables, toss until liquid is evaporated
3. Add garlic, toss a bit
4. Add the rice, cook everything fully
5. When everything is ready, toss briefly with soy sauce and fish sauce

anyone here worked at an americanized chinese restaurant/fast food place before? how do i make chinese restaurant tier fried rice?

this is what i do so far:
- jasmine rice cooked in chicken stock, at least a day old set aside
- small piece of butter in the pan
- scramble egg in it
- teaspoon of garlic and ginger
- add couple handfuls of the frozen peas and carrots
- saute the veggies
- add like 2 or 3 scoops of the chicken-broth rice
- roughly about tablespoon of soy sauce
- about the same amount with oyster sauce
- black pepper
- mix it up and i'm done

i tried adding about a teaspoon of sesame oil and chinese 5 spice before, but they don't really emulate the flavor too well. the 5 spice especially just made it taste/smell like pho.

plz help, i'm going to try attempting this again tonight for dinner

Not even that much of a fatty, but when fried rice happens, I CANNOT STOP MYSELF. I always think, wow this is like a pound and a half of food they gave me, I'll be able to use this for three meals. THEN IT'S ALL GONE. If I put it in the fridge it calls to me. Before I know it I'm eating it again. When I have made it for myself, I'll make like four pounds worth because when I make food I make it in bulk. Then it's all gone in like a day. And I don't even feel that bad afterwards. I could go for more.

I could go for some right now.
