Made a pizza inspired strata.
Cubed some pepperoni from the log, and sweated onions, mushrooms, then garlic in it's oils alongside of oregano.
Added some tomato stock to hydrate old bread cubes, fortified meat/veggie mix with my pizza sauce.
Mixed into the stuffing (thought the bread would sink and form a bottom layer, added 6 blended eggs.
Layer of mozzarella circle slices on top, then spread a little late(maybe 4T)pizza sauce on this cheese layer, topped with shredded mozzarella. Some oregano, smashed fine fried garlic on top. 30 minutes in 400F oven.
