Toast your cumin. It sounds simple, but it makes a huge difference in the flavor. You can use less of it, and it brings out the desirable flavors of the spice while downplaying the bitter woody aftertaste. I just throw mine on a pie tin and throw it under the broiler for a few seconds (around 30 maybe?). You'll be able to smell how much better it will taste. Try it.
