>I tried roasting duck once. I ruined it. Came out greasy beyond all reason and the skin wasn't nice and crisp like muh momma used to make. The skin was soft, soggy/floppy and wholly unappetising. Had the texture of a spent birthday balloon. Just awful.
You need to pinch the skin in right places so the fat renders.

I recommend you learn from Julia Child: https://archive.org/details/JuliaChildMasteringTheArtOfFrenchCooking

Julia Child’s French Onion Soup recipe sucks

I hate Julia Childs French Onion Soup recipe. For such an iconic dish from such an iconic chef, it's disappointing

>Watching old episodes of Julia Child on pluto.tv
>she's making soup
>says don't cover the pot until it cools as it will spoil the soup
>my WTF face

What did she mean by this?

In many cases classics like Julia Childs Mastering The Art Of French Cooking is available for free without even breaking a law, like here: https://archive.org/details/JuliaChildMasteringTheArtOfFrenchCooking

In such cases, buying it is only if you appreciate a physical copy.

Then of course there is stuff you can't find on the internet, and in such cases, then the internet is not enough.

Anyone who says "yes" is a fucking dumb ass

Julia Child wasn't a chef and her show was one of the first cooking shows on television. She's the originator of the "relatable" cook format.
