Pretty much any hard veg - roots and tubers and shit like that works very very well, especially with a roast or sear at the end and relevant herbs involved during SV cooking
Seafood is fantastic SV - it comes out exactly where you want it with no loss of flavour and offers textures normally impossible. I go with 20 mins at 50c for a normal sized filet (150-200g), then sear skin if desired (very quickly with a torch)
it is also a fucking great way to cook eggs (63c for an hour is my favourite

As well as using it as a cooking medium, you can use it for marinades (quicker and more effective/efficient), storage (spoilage bacteria are greatly hindered by low oxygen environments, and freezer burn is massively reduced)

I dunno if this is a dish used somewhere, but I like whipping the whites, and putting them in ramekins with the yolks suspended in the middle, topping with a thin layer of parmesan, then baking in the oven till whites are set and crisp/foamy, with the yolk somewhere between soft/hard boiled, a fair bit of black pepper and yr there

Ethiopian food is phenomenal, but making it properly is a great undertaking
The basis for most meals is njara; fermented teff flour pancakes, which you can do if you have the starter and whatnot and a lot of time
most of the preparations (kifto, doro wat etc.) are pretty simple for someone with an understanding of spices and how to cook

MSG is the concentrated essence of something that will trigger glutamate (richness/umami) taste receptors, and thusly is good;
adds richness and balance to bland foods in a way that few other ingredients can without adding another flavour or texture
bad;
is a shortcut to these flavours; a good cook will use the umami found in nature to enrich dishes
blurs flavours- the distinctions/nuances in food are less impactful and obvious when MSG is used
monodimensional; although we don't yet really understand umami/glutamate receptors, those hit by MSG are a narrow band, and plenty more exist and have a broader scope of interest for serious food
