I've been practicing my ramen lately and made a few batches so far. I couldn't really classify the broth into any of the three major types but I would call it Shoyu because it was literally chicken granuels mixed with soy sauce and fish sauce.

Anyone have any good ramen recipes or expertise with ramen creation? Want to share your favorite methods of preparing broths? Any special noodle dough recipes?

I was thinking about ramen broth, and was wondering if our might be better if it had some acid. I checked the recipe in the momofuku cook book to confirm, and it appears there does not appear to be any.

So would it be a good idea to introduce some? Just a touch? And how? A tablespoon of white wine vinegar? Or is this a mistake?
