What will surprise you is not the difficulty - most home cooking is pretty easy as long as you learn the basics and pay attention to what you're doing. It's the time involved. You will learn dishes you can bang out in fifteen minutes or half an hour, but I find most days between prep, cooking and cleanup I spend about an hour in the kitchen. (A radio is a good thing to have there - pic related).

Managing your fridge and larder is another skill you'll have to learn in addition to cooking. You buy stuff to make recipes you planned for, then you have to figure out other things to do with the remaining ingredients before they go bad. It's kind of like solving a puzzle, and the solution happens to be your dinner. This is how cooking at home becomes cost effective. But you really have to get into the rhythm of it. What you make becomes less a matter of whim than what you need to use up. This is it's own kind of creativity.

No dream kitchen for me. As long as I have a gas range, a wok, a pressure cooker, a rice cooker, a big cutting board and a Chinese cleaver I'm set. And a radio. Gotta have a kitchen radio. (pic related)
