how do i cook tortillas on this pan without ruining the seasoning and leaving behind a burnt layer of char?

is there even seasoning on this pan? its not cast iron. some sort of plain, metal pan. is there a name for these?

whats up with hobos cleaning their cast iron by flipping it over a flame for 5minutes or something? does that not ruin the seasoning and turn it to char?
