I think provolone is the norm, a few of the more touristy places will use cheez whiz. Geno's has a thing, "whiz wit", or "whiz wit-out". I just like cheez whiz better than shitty tasteless provolone and don't give a fuck if it makes me a tourist tier pleb. Speaking of that.
