My fiancé and I got the Breville Barista Express Espresso machine as a wedding gift from some very generous relatives.

Trying the use the non-pressurized basket for the portafilter, but despite the right measurements and tamping, it keeps resulting in under-extracted espresso no matter what grind size.

What are we doing wrong? We picked up a bag of Siena Arte Crema Blend Coffee Whole Roasted Beans from Home Goods, but maybe they weren’t freshly roasted?

Do freshly roasted coffee beans make a difference when using a non-pressurized basket? If so, why?

Should be here in a few hours, I used the predecessor to this in a workplace and really liked it, the grinder is sufficiently adjustable to get exactly what I want and I could make basically any kind of coffee I wanted in it.
