Looked in the catalog and didn't see a knife thread

I need to pick up something for dismantling chicken. My paring knife is a little too small and thin, and my chef's knife is too long and broad. What's a good option? I'm thinking about a Munetoshi Sanjo butcher knife, but salmonella infused chicken juices flowing into the handle seems like it's asking for trouble. Maybe a western style utility knife like pic related? What do you think?
