Pizza is an American food full stop, and we should own up to it. The foccacia and bread plates that peasant migrants made into what we know of as pizza are tenuously recognizable ancestors. It was in the United States that toppings took off and that the concept of pizza actually blew up and grew organically. Italian food reputation efforts ever since have made a point out of pretending like there was always some kind of vibrant ‘traditional Italian pizza’ ecosystem running in parallel all this time to what was going on across the pond because when the pizza train kicked in the door the truth was that they had still been serving flatbreads with onion & basil on top.
