This was a couple months back now but tried making brisket for the first time. Came out pretty good, very moist and tender and a ton of smoke flavor. Realized I need better knives because I trashed a lot of the slices, pic related.

My local grocery had a good deal on flats, so I did brisket as well. Probably should've pulled it a little earlier, the outer slices kept falling apart. (Though that's also due to me having shit knives)
Done on a cheap ass stick burner with pecan wood, 40/60 salt and pepper, beef broth+apple juice mop every hour.
