If you're gonna go as far back as the middle ages or whatever, oxen were eaten but they were more precious as a work animal so they'd work until they dropped and then they were eaten not by the lowly peasants who worked the lands but by the landowners.

With dogs, historically they were always hunting animals or guard dogs so they would help you get food or protect your food. Cats would keep mice away.

The horse taboo is really unique to America because you can find traditional horse meat dishes from Spain to Mongolia and everywhere else. Mongolia's national drink is fermented female horse milk. All those other countries got over that "honeymoon phase" of working with and living with horses, America didn't.
